Clair-Obscur

[et_pb_section][et_pb_row][et_pb_column type=”4_4″][et_pb_text] Clair-Obscur is a santoku type kitchen knife. The mountings are all brushed and oiled black bog oak. The blade has a San-Mai build-up with 500+ layers softer/springy damascus over an ultra high carbon core damascus composed of 1.2008 and 130ni8. it is one of the high-end cooking knives that come out of my hands on bespoke basis. Because the blade shows so much activity, I prefer to keep the mounting quiet and simple, kind of puristic and almost austere. A word about the dark patina: as such it is a kind of cosmetic layer that I leave on purpose over the surface of the blade. It is a proof of quality, since the more carbon inside the material, the darker it gets. Of course, if the knife is used, there will be some dark deposite onto the cut surfaces. This is not harmful. It is possible to remove this dark patina. It is also possible to wait awhile until a user patina builds-up.
